Vegan Pesto
Ingredients
- 2 garlic cloves, chopped
- 2 cups fresh basil leaves, packed
- 1/4 cup pine nuts, lightly toasted
- 1/2 cup olive oil
- 2 teaspoons lemon juice
- salt to taste
Directions
- Toast your pine nuts in a pan, just a quick splash around in a hot pan should do the trick.
- Put all ingredients in a blender and blend.
- Taste, add more salt, taste, add more salt... etc... until it tastes just right. You may also want to adjust the flavor with a splash more lemon. Both the salt and the lemon really run the flavor-show.
