Vegan Pesto

This super simple Pesto recipe is not only Vegan, it's also candida-diet/candida-cleanse approved. Sunday night I stirred it in with some grilled chicken and zucchini noodles (aka Zoodles) and it was d-e-l-i-c-i-o-u-s. Honestly, it had me wondering why pesto needs any cheese at all.

Vegan Pesto

Ingredients
  • 2 garlic cloves, chopped
  • 2 cups fresh basil leaves, packed
  • 1/4 cup pine nuts, lightly toasted
  • 1/2 cup olive oil
  • 2 teaspoons lemon juice
  • salt to taste
Directions
  1. Toast your pine nuts in a pan, just a quick splash around in a hot pan should do the trick.
  2. Put all ingredients in a blender and blend.
  3. Taste, add more salt, taste, add more salt... etc... until it tastes just right. You may also want to adjust the flavor with a splash more lemon. Both the salt and the lemon really run the flavor-show.
